Vegan Carrot Cake

VEGAN CARROT CAKE

  • 1 cup of flour
  • 2 tbsp cinnamon
  • 1/2 tbsp nutmeg
  • 1 tsp salt
  • 1 tsp of baking soda 
  • 3 tsp of baking powder
  • 1 cup of nutmilk
  • 1/2 cup of applesauce 
  • 2 tsp vanilla extract
  • 1/2 cup of coconut oil
  • 3/4 cup of any sugar ((I used coconut sugar))
  • 1 tsp of orange or lemon zest 
  1. 1.      Preheat oven to 375° F

    2.     Combine the dry ingredients first, flour, cinnamon, nutmeg, baking powder, baking soda, salt in a bowl.

    3.     Separately combine now the wet ingredient, starting with the applesauce, vanilla extract, the nut milk, the coconut oil , the sugar then finally the zest .

    4.     Pour the combination of the dry ingredients into the wet mixture and mix well until it becomes moist.

    5.     Add the shredded carrot and mix well.

    6.     BAKE for 35mns or until it is cooked.

    You can choose to use a regular pan or make mini cupcakes as well will the dough.
