RATATOUILLE
- 1 Eggplant
- 1 Zucchini or Yellow Squash
- 3 Tomatoes
- 1 Green or red pepper
- 1 Onion
- 2 or 3 Cloves Garlic
- 1/2 tsp Sea salt, or more to taste
- 1/2 tsp Italian herbs and oregano, or more to taste
- 3 tbs of olive oil or coconut oil
1. Cut all the vegetables into ½-inches dice.
2. Cook the onion and the pepper and bring the pan into a medium heat.
3. Add the Eggplants, Garlic and Zucchini. Mix well for about 7mns.
4. Lastly add the tomatoes and mix well. At this point you can add the salt and the herbs.
5. Cover and cook over a low heat for about 20mns, stirring occasionally
6. Check the seasoning and adjust to the taste.
7. Serve Warm with Quinoa or Rice
