Sourdough Banana Cupcakes
- 150 g all-purpose flour
- 75 g sugar
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1 large egg
- 100 g sourdough starter (100% hydration)
- 80 g mashed ripe bananas (about 2 medium)
- 60 g melted unsalted butter
1. Preheat the oven to 350°F (180°C). Line a muffin tin with paper liners.
2. In a medium mixing bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt.
3. In a large mixing bowl, beat the egg until frothy.
4. Stir in the sourdough starter, mashed bananas, and melted butter.
5. Gradually add the dry ingredients to the wet ingredients, stirring just until combined.
6. Add the vanilla extract
7. Spoon the batter into the prepared muffin cups, filling each about 2/3 full.
8. Bake the cupcakes for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
9. Let the cupcakes cool in the muffin tin for 5 minutes, and then transfer them to a wire rack to cool completely.
