Soft Sourdough Hamburger Buns
- 100 g (1/2 cup) of active, bubbly sourdough starter
- 300 g (2 1/2 cups) of all-purpose flour
- 130 g (1 cup) of bread flour
- 10 g (2 teaspoons) of salt
- 1 tsp dry yeast (optional)
- 30 g (2 tablespoons) of sugar
- 236 g (1 cup) of warm water
- 1 large egg
- 1 egg yolk for brushing
- 60 g (3 tablespoons) of unsalted butter, at room temperature
- Sesame or chia seeds, for topping (optional)
1. In a large mixing bowl, combine the sourdough starter, all-purpose flour, bread flour, salt, and sugar.
2. In a separate bowl, whisk together the warm water, butter and egg.
3. Make a well in the center of the dry ingredients and add the wet ingredients. Mix until the dough comes together.
4. Knead the dough on a lightly floured surface for 8-10 minutes, until it is smooth and elastic.

6. Return the dough to the mixing bowl, cover it, and let it rise in a warm, draft-free place for 2 hours, or until doubled in size.
7. Turn the dough out onto a lightly floured surface and gently punch it down. Divide the dough into 8 equal pieces.
8. Shape each piece of dough into a ball, and place it on a baking sheet lined with parchment paper. Cover with a clean kitchen towel and let the buns rise for 1-2 hours.
9. Preheat the oven to 375°F (190°C). Brush the tops of the buns with beaten egg and sprinkle with sesame seeds, if desired.
10. Bake the buns for 20-25 minutes, or until they are golden brown and sound hollow when tapped.
11. Transfer the buns to a wire rack and let them cool completely.
