My family loves to eat fresh pasta, here is a simple sourdough fresh linguini pasta.

  • 250 g all-purpose flour
  • 100 g semolina flour
  • 150 g sourdough starter (100% hydration)
  • 2 large eggs
  • 1 pinch of salt
  1. 1.    In a large mixing bowl, whisk together the all-purpose flour, semolina flour, sourdough starter, eggs, and salt.

    2.    Knead the dough for about 10 minutes, or until it is smooth and elastic.

    3.    Wrap the dough in plastic wrap and let it rest for 1 hour.

    4.    Roll out the dough into thin sheets using a pasta machine or a rolling pin.

    Roll until the dough is flat

    5.    Cut the dough into thin, long linguini-style noodles.

    6.    Allow the noodles to dry for several hours or overnight before cooking. 

    7.    To cook the noodles, bring a large pot of salted water to a boil. Add the noodles and cook for 2-3 minutes, or until they are al dente.

    8.    Serve the linguini with your favorite sauce and toppings.
