- 250 g all-purpose flour
- 100 g semolina flour
- 150 g sourdough starter (100% hydration)
- 2 large eggs
- 1 pinch of salt
1. In a large mixing bowl, whisk together the all-purpose flour, semolina flour, sourdough starter, eggs, and salt.
2. Knead the dough for about 10 minutes, or until it is smooth and elastic.
3. Wrap the dough in plastic wrap and let it rest for 1 hour.
4. Roll out the dough into thin sheets using a pasta machine or a rolling pin.
