Here’s a recipe for a delicious and flavorful Thai Red Curry Vegetable Stew:

  • 1 tbsp of ghee, butter, or oil
  • 1 diced onion
  • 2 minced garlic cloves
  • 1 tbsp of red curry paste
  • 1 tsp brown sugar (can replace with coconut sugar or honey)
  • 1 tsp of grated fresh ginger
  • 1-3 cloves
  • 1 can of coconut milk
  • 1 cup of vegetable broth
  • 1 diced red bell pepper
  • 1 diced zucchini
  • 1 cup of sliced mushrooms
  • 1/2 cup of sweet peas
  • 1/2 cup of pineapple (can or fresh)
  • 1/2 cup of diced potatoes
  • 2 diced carrots
  • 1/4 cup of fresh cilantro
  • 1/2 cup of chopped fresh basil
  • Salt and pepper to taste
  1. 1.    Heat the ghee, butter, or oil in a large saucepan over medium heat.

    2.    Add the onion, garlic, and grated ginger and cook until fragrant and soft, about 5 minutes.

    3.    Stir in the red curry paste and cook for an additional 1-2 minutes, until fragrant.

    4.    Add the coconut milk, vegetable broth, red bell pepper, zucchini, mushrooms, carrots, potatoes, sweet peas, and pineapple, cloves to the saucepan.

    5.    Bring the mixture to a simmer and cook until the vegetables are tender about 10-15 minutes.

    6.    Stir in the chopped basil and season with sugar and salt, pepper to taste.

    7.    Serve hot with white rice, garnished with additional basil or chopped cilantro if desired.
