Delicious Flavorful Thai Curry Vegetables
- 1 tbsp of ghee, butter, or oil
- 1 diced onion
- 2 minced garlic cloves
- 1 tbsp of red curry paste
- 1 tsp brown sugar (can replace with coconut sugar or honey)
- 1 tsp of grated fresh ginger
- 1-3 cloves
- 1 can of coconut milk
- 1 cup of vegetable broth
- 1 diced red bell pepper
- 1 diced zucchini
- 1 cup of sliced mushrooms
- 1/2 cup of sweet peas
- 1/2 cup of pineapple (can or fresh)
- 1/2 cup of diced potatoes
- 2 diced carrots
- 1/4 cup of fresh cilantro
- 1/2 cup of chopped fresh basil
- Salt and pepper to taste
1. Heat the ghee, butter, or oil in a large saucepan over medium heat.
2. Add the onion, garlic, and grated ginger and cook until fragrant and soft, about 5 minutes.
3. Stir in the red curry paste and cook for an additional 1-2 minutes, until fragrant.
4. Add the coconut milk, vegetable broth, red bell pepper, zucchini, mushrooms, carrots, potatoes, sweet peas, and pineapple, cloves to the saucepan.
5. Bring the mixture to a simmer and cook until the vegetables are tender about 10-15 minutes.
6. Stir in the chopped basil and season with sugar and salt, pepper to taste.
